A BBQ Rub built on Hatch New Mexico Big Jim Peppers – The richness of the NMBJ can’t be overstated. It’s the richest and most complex flavor in the chile world in my not-so-humble opinion. I can’t believe I didn’t try making a rub with this years ago! Use super-sparingly on fish… a little more for fowl… more still for pork, or cake-it-on for beef!
Use it as a slow-smoke rub or a quick-sear steak/chop/breast seasoning. It’s versatile and delicious!
